 The curve ball thrown into our lives by COVID-19 has awarded us the opportunity to slow down, learn and create new ways of doing things. We want to show you how to take advantage of this different place in time. It is more important now than ever for us to be intentional about our emotional, mental and physical health and to stay connected as family and community as one.     Healthy Peanut Butter Pie

     

    Ingredients

    • 1 package extra firm tofu
    • 8 tablespoons powdered peanut butter
    • 1/4 cup monk fruit sweetener
    • 1 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 2 tablespoons cornstarch
    • 1/2 cup water (more if needed to facilitate blending)
    • 1 teaspoon natural butter flavor
    • 1 teaspoon vanilla extract
    • 1 teaspoon Stevita liquid stevia extract


    Preparation

    1. Preheat oven to 350°F, spray pie dish with non-stick cooking spray, and set aside.
    2. Combine all ingredients in blender, and blend until smooth.
    3. Transfer mixture into prepared pie dish, and bake for 30 minutes.
    4. Once cooled, drizzle with chocolate syrup, if desired.

    FAQs

    Q.  Why plant based protein? 

    A.  Whey protein is dairy based which may contain hormones and antibiotics which are harmful to our health.


    Q. Why use the peel of a lemon or orange?

    A. Because there is more vitamin C in the peel than the actual inside of the fruit which is also why I suggest using organic to avoid pesticides.


    Q. Why can't I lose weight?

    A. Most people think that a deficit in calories is the best way to lose weight, however, there are other variables that need to be considered such as age, hormones, medications to mention a few.  Losing weight slowly and safely should always be the goal.


    Q. Can I lose weight and build muscle at the same time?

    A. The vast majority of people will see better/quicker results by choosing to do one or the other (gain muscle, lose fat) at a time.
